Some of the aromas and tastes are not ones that often occur naturally in wines. The process of warming/boiling changes the wine component – but there is twist with this. There are many “theories” about hangovers: what they are, what are the culprits, how to avoid them. The science differs from popular belief – but the science has its roots in human metabolism.
Cranberry aroma/taste does occur in some wines. The colour and aromatic properties of cranberries come from a wide variety of compounds. Retsina has been made for over 2000 years. The Aleppo Pine traditionally used to seal the wine vessels also gives the distinctive flavour, although the processes are different nowadays. Finally liquid Christmas Pudding – Pedro Ximenez.
